CHOCOLATE CHIP COOKIE BAKE-OFF
As I reached for my own go-to chocolate chip cookie recipe, click here, recently, I remembered my sister, Beth, mentioning that she had thrown away all recipes and had just one family favorite chocolate chip recipe now. The simple 2-in-1 recipe I shared, last week, makes a chewy or a shortbread cookie and I know that Beth’s are another yummy variation. This gave me an idea. While we’re here visiting, I’ve asked several family members to bake their favorites for us and, with this research, they’ve given me permission to assemble our tried and true, family favorites to share with you at willowday.
#2: Beth’s Chocolate Chip Description:
This recipe produces a beautiful and consistent, full-bodied, chocolate chip cookie that remains chewy in the middle.
2 1/4 C. Flour
1 tsp. baking soda
1/2 tsp of salt
1 C Butter, room temperature
3/4 Sugar
3/4 Brown Sugar
2 T Vanilla
2 Eggs
16 oz Chocolate Chips
1 Cup White Chocolate Chips
1 1/2 Walnuts ( optional)Cream the butter, then add the sugars and beat well until fluffy. Add vanilla and eggs. In a separate bowl, combine all dry ingredients and mix well, except chips. When well combined, fold in the chips and optional, walnuts. Bake 9-11 minutes at 375 F. Removed from oven and cool.
