Cranberry Granola Bars
2 Cups Old-fashioned Rolled Oats
1 Cup Almond Meal
1/2 C Whole Wheat Flour
1 t. Cinnamon
1 t. Salt
1 C Dried Cranberries
1/3 Cup Mini Chocolate Chips
1/2 Cup Butter
1/2 C. Honey
1 egg
2 t. Vanilla.
- 1. Preheat the oven to 350 F. Line a 9 x 13″ baking pan with baking paper.
- 2. Mix the oats, almond meal, flour, cinnamon, salt, cranberries, and chocolate chips in a bowl.
- 3. Melt the butter in a small saucepan.
- Whisk in the honey, then the egg and vanilla. Pour the butter mixture into the last mixture and combine thoroughly.
- 4. Press the dough into the pan and bake for 20 minutes.
- 5. Cool partially and cut into bars.
It is important to cut these before they have completely cooled or these bars will crumble. I carefully used our large letter cookie cutters at this point, as well. Once cut, I waited to move the shapes until the bars were completely cooled or quickly W’s can turn into V’s.

Yum!)Jean’s recipe for Granola Bars caught my imagination; looking like a perfect breakfast on the run for one of our late sleepers, today; as well as a great snack that was packed up for a Museum Field trip for another. They’re extremely easy to make and delicious. I wanted to use Jean’s recipe but send her back a “post card of an idea” for sharing the book with me. I used this delicious recipe that’s classically shaped and cut Granola Bar Letters with it. W-E L-O-V-E T-H-E-M. (and hope that you will, too)
I have a weakness for shapes and letters and was happy when I tried cutting these out into letters, as well. We’ve started a breakfast or two with the kid’s monograms or a message. The kids current preferred dried fruit is dried Blueberries which was an easy substitution.
