Lollies.  Add Lollipop Cookies to your next party. Bake these with the kids. Bake these for a kid. Bake these and feel like a kid, but, bake: do bake these special Lollipop Cookies.

Bound together by candy, yesterday I shared the Ice Cream Sandwich Cake and now, today: Lollipop Cookies meet Ice Cream Sandwich Cake;   Ice Cream Sandwich Cake meet Lollipop Cookies.  I just know you’re going to be BFF. 

Wrapped in cellophane, tied with a bow, I think that Lollipop Swirl Cookies make the perfect, make-ahead, birthday party cookie. Baked in colours that are coordinated with a party, a classic becomes something new.

Lollipop Cookies:

1/2 cups (3 sticks) butter
1 3/4 cups sugar
1 tea­spoon salt
1 table­spoon Con­fec­tioner Sugar
2 eggs
3 tea­spoons Vanilla
5 cups flour
2/3 cup milk
1/4 cup cocoa powder
Wooden Skew­ers or cookie pop sticks
Food Coloring
Mix but­ter and sugar until creamy. Add the eggs and the salt, and mix well. Beat in milk and vanilla. Add flour a lit­tle at a time, mix­ing it in until all of it has been incorporated.

Divide the dough into three balls, each ball will be a different color. Leave 1/3 plain: 1/3 a color and 1/3 will be chocolate. To create the chocolate, add the cocoa powder to one of the portions and blend thoroughly.

Wrap each ball of dough in its own sheet of plas­tic wrap and refrig­er­ate for at least one hour. Sprin­kle rolling sur­face with flour and roll the dough out until about 1/4 to 1/2 inch thick.

Chill these wrapped layers for 20 min­utes. Place rod on edge of rolled-out dough and roll rod inside sheet of dough. Cut the dough where it meets up. Seal by pinch­ing and press­ing gen­tly. Chill 20 min­utes, then repeat to add other layers.

Roll this log in parch­ment, bak­ing or waxed paper; twist the ends of the paper closed. Chill log until solid, at least 2 hours or overnight.

When you are ready to make the cookies, place the Wooden Skew­ers or cookie pop sticks into the base of the cookie and bake at 350F for approximately 10 minutes. Bake until firm but not brown.

Remove from tray and cool. If desired, melt chocolate and dip the backside of the cookie in chocolate and/or sprinkles, then, let firm.

I was so inspired by my sweet little 7 year old friend, Kira’s, birthday recently that I got busy in the kitchen and at the art table with party ideas for her day when I learned that she wanted to come onto willowday for party ideas.  I’ll share more from her day (decorations and party crafts to come) and this, week, hope that you’ll add these 2 party treats to your party list.

OK. I recognise that I’m breaking my regular willowday flow by doubling up on party food posts, but, I just felt that these two best friends needed do be together. Thank you for sharing my patient impatience and throwing the editorial calendar out the window: what are they, if not rules to be broken?
